Featured on Jamie’s Ultimate BBQ, these sesame chicken burgers are a lighter twist on a traditional burger and perfect for quick family BBQs.
Ingredients:
- 500g free-range chicken mince
- 2 tablespoons sesame seeds
- 4 burger buns
- 1 lime
- 1 tablespoon gochujang paste
- 4 tablespoons Greek yoghurt
- 1 red pepper
- 4 spring onions
- 160g white cabbage
- ½ cucumber
- 2 sprigs fresh mint
- Olive oil
- Sea salt & black pepper
Method:
Start by preparing the fresh slaw. Thinly slice the red pepper, spring onions, cabbage and cucumber. Finely chop the mint and combine everything in a bowl with lime juice, olive oil and seasoning.
In a separate bowl, mix the Greek yoghurt with gochujang paste and a squeeze of lime juice to create a smoky, slightly spicy burger sauce.
Season the chicken mince well with salt, pepper and lime zest. Divide into four equal portions and shape into burger patties. Coat each patty in sesame seeds.
Lightly oil the grill and cook the burgers over medium heat for approximately 6 minutes on each side until golden, lightly charred and fully cooked through.
Toast the burger buns directly on the BBQ for extra flavour and texture.
Assemble by layering the buns with the gochujang yoghurt, slaw and cooked sesame chicken burgers.

Ingredients:
Chicken & Marinade:
- 4 chicken breasts
- 800g boneless chicken thighs
- 2 lemons
- 6cm piece fresh ginger
- 2 cloves garlic
- 2 teaspoons chilli powder
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 100g natural yoghurt
- 2 mixed-colour chillies
- Fresh coriander
- Salt & black pepper
Butter Sauce:
- 2 onions
- 1.5kg ripe tomatoes
- 50g unsalted butter
- 80g cashew nuts
- ½ teaspoon fenugreek
- 300ml double cream
- Curry leaves
- Olive oil
Flatbread:
- 500g self-raising flour
- 400ml tin coconut milk
- 1 lemon
- Fresh coriander
- Soft butter
Method:
Start by preparing the marinade. Grate the ginger and garlic, then mix with lemon zest, lemon juice, chilli powder, cumin, coriander, turmeric, yoghurt and seasoning.
Cut the chicken breasts and thighs into chunks, then coat well in the marinade. Leave to marinate for at least 1 hour to build flavour.
Thread the marinated chicken onto skewers.
Grill the kebabs over medium-high heat, turning regularly until nicely charred and fully cooked through.
To make the butter sauce, grill or char the tomatoes, onions and chillies until softened. Blend with cashew nuts, butter, curry leaves and seasoning until smooth. Return to heat and stir through cream to create a rich buttery sauce.
For the coconut coriander flatbread, mix the flour, coconut milk, lemon zest, chopped coriander and seasoning into a soft dough. Divide into portions, flatten and grill on the BBQ until lightly charred and cooked through.
Serve the grilled kebabs over the butter sauce with warm flatbread and fresh coriander.

Ingredients:
- 1 large aubergine
- 2 courgettes
- 1 red onion
- 2 red peppers
- 1 fennel bulb
- Cherry tomatoes
- 150g mixed unsalted nuts
- 50g dried cranberries
- Fresh mixed soft herbs
- 200g halloumi
- 2 mixed-colour chillies
- 1 lemon
- 100g Greek yoghurt
- ½ pomegranate
- Olive oil
- Salt & pepper
Pancakes:
- 300g strong bread flour
- 1 sachet dried yeast
- Honey
- Warm water
Method:
Begin by preparing the pancake dough. Mix the flour, yeast, honey and warm water together, knead until smooth, then leave to rise.
Slice the aubergine, courgettes, fennel, onion and peppers into even grilling pieces. Toss lightly with olive oil and seasoning.
Grill the vegetables until softened, lightly charred and smoky.
Dice the halloumi into chunks, thread onto skewers and grill until golden and slightly crisp.
For the dressing, roughly chop the nuts, herbs, dried cranberries and chillies. Mix with olive oil, lemon juice and seasoning.
Roll out the pancake dough and cook directly on the BBQ until lightly puffed and charred.
Serve the grilled vegetables and halloumi over the pancakes, spoon over Greek yoghurt, scatter pomegranate seeds and finish with the fresh herb dressing.
